Quick lunch tip!

Sliced fresh vegetables, leftover boiled potatoes, some home made seitan, bouillon cube, water, 4 minutes in the microwave, and voila! A quick and tasty lunch.

I sometimes add leftover rice or quinoa. More often I'll prepare rice or bean vermicelli at the office. To do this, I'll put the vermicelli in the bowl with the bouillon and nuke it for a few to soften them. Then add the vegetables and microwave a bit more. Also, I often stir-fry the veggies the night before, but I'm going to try to do that less.
